Good morning and come on in out of this winter wonderland!  I’m pretty confident we’ll have a white Christmas this year after our two “snow events” that we survived this week. The above photo is part of my wonderful trek home from work. Fun times. We have about six inches on the ground and our sleds are waiting patiently on the trailer. Sigh.

If we were having coffee, I’d tell you that among the stops I have to make today, I’ll be repurchasing ingredients for the Grinch cookies I attempted yesterday. They are supposed to look like this and I’d planned to bring them to work for the cookie exchange tomorrow. However, I misread the directions and rolled them in just powdered sugar, not the powdered sugar and corn starch mixture, (which I also mistakenly mixed into the cookie batter). The sugar melted into the cookie during baking so it lost the sugar coating it’s supposed to have. They taste OK, but the effect was lost. I tried these for the first time on a Saturday for a reason, LOL. I knew if I screwed up I’d get another day.  So here goes.

I didn’t realize how much baking I’d planned until I got the ingredients all together. Yikes. I also have to plan it out as some of the treats I won’t be giving away until Christmas Day, so I didn’t want to make them too early.  Brookies, Christmas Oreo Bark, Blizzard Cookies and Christmas Pretzel Hugs are on the agenda.

And gift wrapping. I’m actually ahead of the game like I planned to be. Just a few more things to do and pop in the mail.

If we were having coffee, I’d tell you I’m happy that we solved our internet problem by changing the router channel. Netflix seems to be behaving better without dropping the connection multiple times.  I hope that is the only issue as our Roku box is getting old.

  1. We had some cookie disasters in our house too. A little different, and requiring a lot of cleaning, but still, there are dangers in home baked goods 😉 I hope you have a great week!

  2. Those cookies look yummy! They look like our snowcap cookies, only green.
    I’m not doing any baking this year. For a few year I tried to follow the family tradition of making a ton of cookies to take to people, and it was a lot of fun — but one of the advantages of living with my mom now is that she is in charge of that! Since she’s recently also gone gluten-free she’s been playing with making our traditional recipes gluten-free, which means this year I get to enjoy them all! So excited!

    1. Awesome! Glad you’ll be able to enjoy them! Luckily I was able to salvage them on the second try and I think they’ll be OK.. Just NOT the way the recipe is written.

  3. Those grinch cookies look fantastic. I might even be prepared to try and cook them but it is so hot here at the moment that I don’t want to turn the oven on for anything. So different to your snow. Hope you have a good week and thanks for coffee.
